WIAW: Sedona

Image
Dropping in to post a quick WIAW, documenting eats from my trip last week to Sedona, Arizona!  (Read all about our adventures here)

We didn't have a single bad meal, and I was highly impressed by the gluten-free accommodations everywhere we went!

Picazzo's, a restaurant that is some 90% gluten-free, was outstanding.  We started by sharing the "Heart Healthy Gourmet" salad, which was SO good we got it again the next day to pair with our leftovers for dinner!!

As an entree, I very much enjoyed my mushroomy-goodness rotelli:

Even my gluten-loving compadre enjoyed his buffalo chicken pasta dish!

Brunch at Red Rock Cafewith the locals was quite satisfying.

In the evening, we sampled the local wine: Kokopelli

On our hikes, I sustained my energy by munching on Quest Protein Bars:

Lunch uptown was at Wildflower Bread Company ("making up for the gluten-free dinner"), where I got a delicious Chopped Salad with Salmon!

In town, I also enjoyed a bit of fresh fudge from th…

SPIRALIZE!

Image
This is something I wanted for a long time. I heard all the grain-free recipe bloggers raving about it, and quickly added it to my wish list. Just when I'd decided to bite the bullet and buy my own (it's really not that expensive--just $35!), I was lucky enough to win one from Amber's giveaway on Paleo Savvy! I was positively giddy and couldn't wait to get started with my new kitchen toytool.

The Spiral Vegetable Slicer: I can't sing this thing's praises enough. Now, I love my spaghetti squash.  Spaghetti squash bolognese (like this Balanced Bites recipe from Practical Paleo) is one of my absolute favorite, most often-cooked and consumed dishes. However, sometimes the time spent cooking, de-seeding, and scooping out that spaghetti squash is just too much.  I've also used a julienne peeler to shred up squash, but I've also found that to be a laborious, messy process.

Enter: the Spiral Slicer.

This thing takes regular ole vegetables and turns them into...

Prepare Weeknight Paleo

Image
January Paleo is going well!  Or, well, was going well.  First, let me say that it's amazinggg how much more energized and slimmer I feel after just a week, or a few days, even, of paleo, sugar-free eating.  My digestion stopped bothering me and my hand eczema began clearing up again, very quickly.  Awesome.  My second week was toughest,as predicted, both just because it was week 2 and because it was a particularly stressful workweek.  Thus, I had a few setbacks and noticed the negative effects immediately, but I'm back and finishing out my month.

Eleven months into my experience with paleo nutrition, I've learned a lot...

Planning and preparation are KEY.  If you say, "I'm going to eat the paleo way" and then just wander out into the world, you will almost certainly struggle and fail. That's just the way it is. I found great success by preparing my week's meals in advance on Sunday.  It greatly helps with enforcing any dietary goals.  We don't li…
