make Egg Bites

Got a simple, savory recipe for ya!


Inspired by this recipe by Liz of I <3 Vegetables, as well as a tweet from Caitlin a while back, I finally mixed up some eggs, vegs, and cheese to bake in the oven... into muffins.  And don't be afraid to eat the whole egg.  Nicole explained yesterday why yolks are good for you!


My little egg bites contained four eggs with chopped spinach, sun-dried tomatoes, and goat cheese.  You can also use diced onion, pepper, other vegetables, anything that strikes your fancy.


I've gotta say, though, I really enjoyed my flavor combo :)


Pour evenly into greased/oiled (mini) muffin tin and stick it in the oven at 350 for about 10-12 minutes.


They come out perfect.


Basically, they're bite size frittatas!



4 eggs makes 12 of these little guys, so I had half immediately and saved the rest for later...


and they were delicious cold, right out of the fridge!  Or you can heat them up again.  A quick and easy make-ahead breakfast, snack, whatever you like.

  1. Egg Bites are delicious and sooooo easy! They are a huge hit at my house and I love how you can add anything you want to them. & yes, I eat the entire egg. We have our own free range chickens here and I believe they lay the best eggs ever!

  2. Those little guys are ADORABLE! And yes eat the whole egg! People are so silly about eliminating fat from things...when really the fatty part of the egg is good for you. Also, we need fat to do things like keep us warm and protect our organs and whatnot. ;-)

  3. Oh! I've made these before to eat during my contest prep time! They're awesome to have on hand for a quick breakfast and made eating eggwhites a tad less boring!

  8. I'm a "whole egg" kind of girl... the egg white thing just lacks the flavor I need to eat eggs! Of course, I also add cheese & veggies - this morning's combo was onions, spinach and goat cheese! Oh and Sriracha. Always Sriracha.

  12. These look like an amazing pre/post workout snack perfect size with some protein and carbs but not overfilling! What a great idea! I need a muffin tin ASAP I think I will try eggs, onions, red pepper, spinach and some cilantro and maybe dip those little guys in salsa! Love and Shine CourtStar

  13. LOVE the ingredients you chose. Sundried tomatoes and goat cheese are so good. Looks like a winning recipe, but next time I highly recommend you stir in a little brown mustard in there. Telling you, it's AMAZING!
