WIAW: Love Your Veggies!

It's time for another What I Ate Wednesday, with a special twist that I just couldn't pass up...





To VEG-ify our WIAW posts, Jenn encouraged us to not only eat our vegetables, but also to share all kinds of fun tidbits about our veggie preferences and habits.  This was exciting for me; I've never been shy about my love for vegetables.  In fact, my very first food post was a dare to "Eat Your Vegetables!"  Check that out to see how I roast all kinds of vegetables to keep on hand for the week.  Do all the cooking at once, and then they're so easy to toss in salads, omelets, wraps, sandwiches, or just on a plate with a protein.  Go for it!

Today, I'm going to share with you What I Ate Last Wednesday. Hope that's okay.

In the morning before hitting the gym, I had a hefty bowl of Greek yogurt with blueberries, walnuts, and banana.

Oh, THERE it is! :)


OK, so I started by vegi-ful WIAW with fruit. Forgive me.  But I love starting my day off with fruit, it tastes SO good in yogurt, and it was easy on the tummy before my Super Wednesday Workout! Sadly, the workout was less "super" than usual. Due to a busy day, I couldn't stay for Pilates, so I lifted some weights before going into Spinning. It did the job.

Back home for lunch, I made a nice, hearty, veggie-packed omelet. (Who says you can't have breakfast for lunch?)  Such an easy way to up your vegetable-intake for the day.  As always, some pre-made roasted vegetables were ready-to-go in the fridge, so I pulled asparagus and broccoli from there. Also took some "Baby Bella" mushrooms to sautee first, and set aside with the rest. Then, some eggs and a beautiful omelet flip later....


I needed some more color, so I threw on salsa! Tomatoes/peppers = bonus veggie points.


OK. All set for my busybusy day. Off I went.

In the afternoon, on the go, I pulled a snack out of my bag: Apple & Cheese. Easypeasy.


A just-missed train (wahhh) delayed my arrival home, so I bought another snack to tide me over til later.


I forgot that I like celery! I should stick them on my grocery list more regularly.  (Don't feel bad for the carrots; I already knew I liked carrots.)

At last, DINNER! Leftovers from the previous night: Quinoa with Butternut Squash, Broccoli, and Mushrooms. In my opinion, anything with butternut squash is a winning recipe, but this really was a delicious combo.  I can't wait to make it again!  I also sprinkled some fresh balsamic vinegar on it (my favorite way to dress vegetables), and there's the dinner I'd been looking forward to all day.  Still delicious!

Some snacks were out at home, so after doing some work, I also noshed on Stacy's Multigrain Pita Chips with Tribe hummus.  As much as I love veggies, I also love hummus!

So there you have it!  That's what I ate Wednesday.  What are YOU eating today?

  1. I love all the veggies in your omelet! I love veggies simply roasted! They're so delicious and the flavor comes out with just some EVOO!

  5. Your dinner looks like the one I had tonight--quinoa with butternut squash, black beans and toasted sunflower seeds. :-)

  6. The Quinoa looks great! So do those roasted veggies! I missed out on this week's WIAW. Will have to remember for next week.
    Not sure what I am having... but know I have yet to incorporate veggies into the day!

  8. Wow everything looks amazing from your crazy veggie-packed breakfast and then your snack when you missed your train...where the heck do you buy snacks like that??

    1. Haha, thanks! the veggie-hummus snack was from Chickpea! They're known for falafel sandwiches but also have a section of pre-made snacks and meals. I was so happy when I could find something decent in the train station!

  9. I feel like starting the day with fruit instead of a veg at bfast is TOTALLY okay especially since veg breakfasts like omelets are time-consuming to make! That one you had for lunch looks good, I LOVE salsa with eggs, SUCH a win.
